A way to have 2 separate schedules to run scripts on the same pool?
For example:
1st script - On Sunday morning run Windows Updates at 12:30am
2nd script - Every night run script to remove Zoom (64-bit)
Request - 2 separate schedules to run scripts on the same pool

This is a great request and I think we see it often. I don't know if this is being looked at by our product team yet, but I would imagine it's at least on radar.
One thing you may want to look at if your needs are application specific for some of these, is the new Unified App Management feature in NMM. You deploy apps ad hoc, but also create deployment policies for those apps, and track status. That includes being able to have applications uninstalled! Here's a quick screenshot of what that looks like.

*edit* I don't see that feature in the menu
I have run into this issue quiet often and just end up deleting the weekly script so I can run one after hours. The issue with doing this is that if I get busy the next day, I might forget to put the weekly script back in place.
Michael Lenahan, you should be able to reach out to your Partner Account Manager (I'm not sure on the official title) or submit a support case and they can get that feature added to your environment. (It's in Private Preview as of v4.7.0, but I'm guessing it'll be announced/moved to production at NerdioCon in a few weeks)
