We recommend sticking with Windows 10/11 multi-user for the cost savings. (see Eligible licenses to use Azure Virtual Desktop)
With the Server OS, you need to pay for the OS license AND the RDS CALs.ย
The only reason, that I can think of, to use a Server OS is if the customer's software is NOT compatible with multi-session Windows OS.ย
But that's the great thing about AVD. You can do what works best for you and your customers. ๐
