Does anyone have some best practices for deploying remote apps in your AVD environment? Do you use a Windows server or just one of your desktop images?

We recommend sticking with Windows 10/11 multi-user for the cost savings. (see Eligible licenses to use Azure Virtual Desktop)
With the Server OS, you need to pay for the OS license AND the RDS CALs.
The only reason, that I can think of, to use a Server OS is if the customer's software is NOT compatible with multi-session Windows OS.
But that's the great thing about AVD. You can do what works best for you and your customers. 😎
