I would like to be able to set a maintenance window across all hosts or a subset of hosts in 1 step instead of on each host pool. This would save a lot of time when a mass change is needed.

I wanted to offer you a (belated) welcome to the community, Matt W CA 🙂!
I think we may already have this feature, or something similar, that may do what you're wanting, but I'm hoping you can expand on your use-case a bit more.
In our v5.2 release, we add the ability to have multiple schedules that can be used to standardize schedules across Host Pools, Servers, and Session hosts.
